Chicken Parmesan — or chicken Parmigiana — is a classic Italian-American dish. The breaded chicken breast with tomato sauce, three cheeses and sometimes topped with ham or bacon is a wonderful entrée.

The ingredients make the dish seem like traditional Italian fare, but its origins are from here in the United States.

In the mid-1950s, the classic dish was featured on multiple New York restaurant menus, and from there chicken Parmesan has become an American classic.

For such an iconic Italian-American dish, there is no question that Baratta’s Italian Restaurant is the place to go to enjoy its classic Italian-American food.

Baratta’s Italian Restaurant began as a small hometown grocery store in the 1950s that was run by the Baratta family. In 1993, the store was sold to three Des Moines Lincoln High alums, Joe Gatto and Curt and Lisa Kruger. Since the early 1990s, Baratta’s has expanded its menu to many classic Italian-American dishes but has opened another location and opened the business to catering as well.

The owners wanted to stay true to the Italian heritage of the family restaurant, and as such, made it a point to know their customers’ names. The owners strive to be at the restaurant every day to greet their guests.

“We pride ourselves in making this a family restaurant. Our menu is pretty basic, but you’re going to come here for good value, and you’re going to leave here full,” said Gatto.

There are no bells and whistles, no twists on the menu or meal deals. Baratta’s Italian Restaurant sticks to its roots of good Italian food and family-friendly service.

Its staff is as loyal as its customers.

“We have employees here that have been here since we opened more than 20 years ago,” said Kruger.

The chicken Parmesan is a basic Italian dish found at most any Italian restaurant and is a guest favorite at Baratta’s. A chicken breast — a 4-ounce at lunch or a 6-ounce at dinner — is covered with breadcrumbs and cheese, deep-fried and served with a side of spaghetti with Baratta’s signature red sauce.

“Our red sauce is what we prize ourselves in. We have a marinara sauce, but our traditional red sauce that we have makes all the Italian food we have, including the chicken Parmesan, have a great flavor,” said Gatto. RELISH
